biologische extra vierge olijfolie. Blus af met een beetje warme bouillon en ga door met koken, voeg geleidelijk de rest van de bouillon toe en roer vaak.<\/p>\n<p>Halverwege de kooktijd de saffraandraadjes oplossen in een pollepel warme bouillon en bij de rijst voegen. Kook gaar onder voorzichtig roeren. Haal van het vuur en roer de boter en geraspte Parmigiano Reggiano DOP door de risotto.<\/p>\n<p>Roer tot een romige en gelijkmatige consistentie is bereikt. Spreid de risotto uit in een gelijkmatige laag op een bakplaat en laat volledig afkoelen. Eenmaal afgekoeld, druk de rijst in een ronde vorm of modelleer in de gewenste vorm. Verwarm een antiaanbakpan met een scheutje biologische extra vierge olijfolie en bak de rijst aan beide kanten tot een goudbruine, krokante korst ontstaat.<\/p>\n<p>Plaats de gebakken rijst in het midden van het bord.
