Couvrir de film alimentaire et laisser reposer. \u00c9taler la p\u00e2te finement et d\u00e9couper des pappardelles larges. Les disposer sur un plateau farin\u00e9 et les laisser s\u00e9cher l\u00e9g\u00e8rement. Couper la viande de sanglier en petits morceaux et la faire mariner dans du vin rouge avec des herbes aromatiques et des \u00e9pices. Dans une grande casserole, faire revenir dans l&rsquo;huile d&rsquo;olive extra vierge biologique un hachis de c\u00e9leri, carotte et oignon. Ajouter la viande \u00e9goutt\u00e9e de la marinade et faire bien dorer sur tous les c\u00f4t\u00e9s.<\/p>\n<p class=\"p1\">D\u00e9glacer avec une partie du vin rouge de la marinade, laisser \u00e9vaporer compl\u00e8tement. Poursuivre la cuisson \u00e0 feu doux pendant au moins une heure, en ajoutant un peu d&rsquo;eau ou de bouillon si n\u00e9cessaire. Assaisonner de sel et de poivre en fin de cuisson.<\/p>\n<p class=\"p1\">Couper les tomates et les faire sauter \u00e0 la po\u00eale avec un filet d&rsquo;huile d&rsquo;olive extra vierge biologique, sel et poivre. Ajouter un peu d \u00ab &lsquo; \u00bb eau et laisser r\u00e9duire. Passer la sauce au chinois fin, puis continuer la cuisson jusqu&rsquo;\u00e0 obtenir une consistance dense et velout\u00e9e.<\/p>\n<p class=\"p1\">Cuire les pappardelle dans une grande quantit\u00e9 d&rsquo;eau sal\u00e9e, les \u00e9goutter al dente et les faire sauter bri\u00e8vement \u00e0 la po\u00eale avec une partie du rago\u00fbt de sanglier.
