P\u00e9trir jusqu&rsquo;\u00e0 obtention d&rsquo;une p\u00e2te lisse et \u00e9lastique. Envelopper dans du film alimentaire et laisser reposer 30 minutes. Faire cuire les pommes de terre avec leur peau dans de l&rsquo;eau sal\u00e9e. Les \u00e9goutter, les peler et les \u00e9craser pendant qu&rsquo;elles sont encore chaudes. Dans une po\u00eale, faire chauffer l \u00ab huile d&rsquo;olive extra vierge biologique et faire dorer doucement les gousses d \u00bb ail \u00e9cras\u00e9es jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient dor\u00e9es, puis les retirer. Verser l&rsquo;huile d&rsquo;olive extra vierge biologique parfum\u00e9e sur les pommes de terre, ajouter le Parmigiano Reggiano AOP r\u00e2p\u00e9, le sel, le poivre et une r\u00e2p\u00e9e de noix de muscade. M\u00e9langer soigneusement et laisser refroidir. Blanchir les gousses d&rsquo;ail dans l&rsquo;eau pendant 2-3 minutes pour en att\u00e9nuer le go\u00fbt. Les \u00e9goutter et les transf\u00e9rer dans une casserole avec la cr\u00e8me et le lait. Cuire \u00e0 feu doux pendant environ 10 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient tendres. Mixer le tout jusqu&rsquo;\u00e0 obtention d&rsquo;une cr\u00e8me lisse et velout\u00e9e. Ajuster l&rsquo;assaisonnement. \u00c9taler la p\u00e2te sur une \u00e9paisseur d&rsquo;environ 2 mm. R\u00e9partir la farce \u00e0 intervalles r\u00e9guliers sur une abaisse, couvrir d&rsquo;une seconde couche et bien presser autour de la farce pour sceller. D\u00e9couper les tortelli avec un emporte-pi\u00e8ce ou une roulette dentel\u00e9e, en scellant soigneusement les bords.<\/p>\n<p class=\"p1\">Cuire les tortelli dans une grande quantit\u00e9 d&rsquo;eau sal\u00e9e pendant 2-3 minutes. Les \u00e9goutter et les assaisonner d&rsquo;un filet d&rsquo;huile d&rsquo;olive extra vierge biologique.
