par pr\u00e9parer la ganache au caf\u00e9 en portant \u00e0 \u00e9bullition la cr\u00e8me et le caf\u00e9. Verser ensuite la cr\u00e8me bouillante sur le chocolat hach\u00e9 et ajouter la g\u00e9latine pr\u00e9alablement tremp\u00e9e dans l\u2019eau froide.<\/p>\n<p class=\"p1\">Verser le m\u00e9lange dans un moule et refroidir rapidement dans un refroidisseur \u00e0 air.<\/p>\n<p class=\"p1\">D\u00e9mouler la ganache et d\u00e9corer \u00e0 volont\u00e9 avec de l\u2019or comestible.<\/p>\n<p class=\"p1\">Pour le ricotta semifreddo, commencez par pr\u00e9parer un sirop en portant l\u2019eau et le sucre \u00e0 121 degr\u00e9s. Monter les blancs en neige et verser le sirop chaud tout en continuant \u00e0 fouetter, jusqu\u2019\u00e0 ce que le m\u00e9lange soit compl\u00e8tement refroidi.<\/p>\n<p class=\"p1\">M\u00e9langer la meringue avec la ricotta tamis\u00e9e, puis ajouter la cr\u00e8me semi-fouett\u00e9e.<\/p>\n<p class=\"p1\">Faire chauffer un peu de cr\u00e8me et y dissoudre la g\u00e9latine, puis l\u2019ajouter au m\u00e9lange.<\/p>\n<p class=\"p1\">Verser le m\u00e9lange dans un moule et le solidifier au cong\u00e9lateur.<\/p>\n<p class=\"p1\">D\u00e9mouler le semifreddo lorsqu\u2019il est compl\u00e8tement congel\u00e9.<\/p>\n<p class=\"p1\">Ensuite, pour pr\u00e9parer la gel\u00e9e de sambuca, hydrater la gel\u00e9e dans de l\u2019eau froide.<\/p>\n<p class=\"p1\">Chauffer l\u2019eau et y dissoudre la g\u00e9latine. Ajouter la sambuca et bien m\u00e9langer.<\/p>\n<p class=\"p1\">Laisser se solidifier au r\u00e9frig\u00e9rateur et passer la gel\u00e9e solidifi\u00e9e au presse-pur\u00e9e pour obtenir une consistance poudreuse. Enfin, composez le plat en disposant tous les \u00e9l\u00e9ments sur une assiette plate comme vous le souhaitez.
