Les ar\u00f4mes et le go\u00fbt doivent transmettre une perception fruit\u00e9e qui change en fonction du degr\u00e9 de maturation des olives, des cultivars utilis\u00e9s et peut \u00eatre intense, moyenne ou l\u00e9g\u00e8re. Pour d\u00e9guster correctement une huile d\u2019olive extra vierge, il faut effectuer l&rsquo;op\u00e9ration particuli\u00e8re dite de \u00ab stripage \u00bb qui, en faisant passer l\u2019air entre les dents, transporte les ar\u00f4mes de l&rsquo;huile dans la bouche, en la retenant pendant quelques secondes et en appr\u00e9ciant toutes les caract\u00e9ristiques.
