Mit etwas hei\u00dfer Br\u00fche abl\u00f6schen, dann die restliche Br\u00fche nach und nach unter h\u00e4ufigem R\u00fchren hinzuf\u00fcgen und weiterkochen.<\/p>\n<p>Nach der H\u00e4lfte der Garzeit die Safranf\u00e4den in einer Kelle hei\u00dfer Br\u00fche aufl\u00f6sen und zum Reis geben. Unter vorsichtigem R\u00fchren fertig garen. Den Risotto vom Herd nehmen und mit Butter und geriebenem Parmigiano Reggiano DOP cremig r\u00fchren.<\/p>\n<p>R\u00fchren, bis eine cremige und homogene Konsistenz entsteht. Den Risotto gleichm\u00e4\u00dfig auf einem Backblech verteilen und vollst\u00e4ndig abk\u00fchlen lassen. Sobald er kalt ist, den Reis in eine runde Form pressen oder in die gew\u00fcnschte Form bringen. Eine antihaftbeschichtete Pfanne mit etwas Bio-Oliven\u00f6l Extra Vergine erhitzen und den Reis von beiden Seiten braten, bis eine goldbraune und knusprige Kruste entsteht.<\/p>\n<p>Den Safranrisotto al salto mittig auf dem Teller anrichten.
